As grocery prices keep climbing, more Americans are turning to so-called “struggle meals” to make ends meet.

According to an AP-NORC poll in August, more than half of U.S. adults say food costs are a “major source” of stress. Nearly 30% have even used “Buy Now, Pay Later” programs to cover essentials like groceries.

Google Trends data shows searches for “struggle meals” hit a record high this year, with interest tripling between August and September. On TikTok and Instagram, the hashtag #strugglemeals has appeared in thousands of posts as users swap ideas for cheap, simple meals.

A “struggle meal” can mean anything from a bare-bones budget dish to something cooked during a tough financial stretch. Some of the most popular examples include nachos, cheesy tortilla rolls, eggs with rice, ramen, and hot dogs.

But while they’re easy on the wallet, nutrition experts say these meals can lack key nutrients. “They might be low in protein, fiber and micronutrients, and high in refined carbs, sodium and fat,” said Andrea Glenn, a nutrition professor at NYU.

Her advice? Balance them out. “If you’re eating something like instant ramen or rice or pasta, you can add an egg or canned beans and lentils and then some vegetables as well,” she suggested. Frozen or canned veggies can make a big difference without driving up costs.

Glenn also recommends cooking in bulk and freezing leftovers. “Try not to be too stressed out about it,” she said. “If you’re food insecure, it’s fine to have ramen sometimes—but if it’s regular, see what you can add for more nutrients.”

Her go-to “struggle meal” is a classic: brown rice with beans, mixed veggies, and a dash of spicy chili oil. Simple, filling, and budget-friendly—just what millions of Americans are searching for.
